Thai Soup
Ingredients:
Onion - 1/2 cut to big cubes
Oil - 2 tbsps
Prawns - 200 gms
Lime leaves 3-4
Lemon grass - 3 small pieces
Chicken stock or fish stock- 2 cans
Tomatoes 1/2 cut to cubes
Lemon juice- 4-5 tbsps
Soya sauce - 2 tbsps
Fish sauce - 2 tbsps
Chilly paste - 1 -2 tsps
Coriander leaves for garnishing
Mushrooms - 4-5 cut lengthwise
Sugar- 1 tbsp

Method

  1. Heat oil in a pan and add onions and sauti it for sometime till it turns transparent.
  2. Then add the chicken stock and when it starts to boil add lemon grass, ginger and prawns.
  3. Then make a paste of fish sauce, Soya sauce and the chilly paste and add it to the chicken stock.
  4. Later add the mushrooms, lime juice and sugar one after the other.
  5. Finally, when the prawns are done add tomatoes and finally garnish it with finely minced cilantro.
