Ingredients:
1 pack of frozen chopped Spinach
2 Green Chillies sliced
1 tblspoon Tamarind Paste
1/2 tablespoon Rice Flour
2½ cups of Water
1/2 tsp Turmeric Powder (haldi)
For seasoning:
1/2 tsp of Methi seeds (Fenugreek)
1/2 tsp Rai seeds (mustard)
1/2 tsp Hing
1 or two Red Chillies (adjust according to desired spiciness)
1/2 tablespoon Oil
For garnish:
1 tablespoon of Mustard seeds
1/2 tablespoon Oil

Spinach Stew
Method
- Cook the frozen spinach in a microwave as per directions on the pack for 4 minutes, stir it with a fork and cook for 4 more minutes.
- Heat some oil in a thick pan/vessel (Should be deep), add hing, methi (fenugreek), rai (mustard seeds), red chillies (optional) and let them splatter a little bit.
- Add the sliced green chillies and let it fry for about 10 seconds. Add the cooked spinach and leave it on medium fire for a couple of minutes.
- Pour the water into the pan and add in the tamarind paste and haldi (turmeric).
- Add salt to taste. (1/2 tsp of sugar can be added to moderate the sourness but it is optional). Let it boil for a couple of minutes.
- Mix the rice flour in some water to get a watery consistency and add it to the stew. This helps to thicken the stew a little bit.
- Remove from fire after a couple of minutes.
- Optional garnish:
- Blend the raw mustard seeds and oil in a blender to form a thin paste and add it to the stew and mix it well. Adds a nice flavour to the stew.
- Note: The ingredients measurements can be altered to taste. This is a very typical Andhra recipe. Goes very well with rice.
