Savoury Vegetable Cake
Ingredients:
Maida - 1 cup
Baking powder - 1 tsp
Salt - 1 tsp
Sugar - 2 tsp
Turmeric powder - e tsp
Onion - e cup finely chopped
Oil - e cup
Mixed vegetables* - 1 cup boiled and chopped finely
Green chilies - 1 tsp finely chopped
Ginger - 1 tsp finely chopped
Coriander leaves - 1 tbsp chopped
Eggs - 2
Lime juice - 2 tsp
Mint leaves - 1 tbsp chopped
Green chutney and tomato slices for garnish (the chutney given in the chutney fish recipe may be used)
*Carrots beans cauliflower etc.

Savoury Vegetable Cake


Method

  1. Mix maida with baking powder, salt, sugar and turmeric powder.
  2. Combine onion with 1½, cup of oil in a small microwave safe bowl and cook on full power for 2-3 minutes. Allow to cool.
  3. Add the cooked onion, vegetables, green chilies, ginger, coriander and mint leaves to the maida mixture.
  4. Whisk the eggs with remaining oil and lime juice and fold into the above mixture.
  5. Pour it in a 6-7' round microwave safe dish.
  6. Place an upturned plate on the turn table and place the round dish on the plate. Cook on full power for 4-5 minutes. Allow to stand for 5 minutes.
  7. Cool and spread chutney on top and decorate with tomato slices.
