Ingredients:
Maida - 1 cup
Baking powder - 1 tsp
Salt - 1 tsp
Sugar - 2 tsp
Turmeric powder - e tsp
Onion - e cup finely chopped
Oil - e cup
Mixed vegetables* - 1 cup boiled and chopped finely
Green chilies - 1 tsp finely chopped
Ginger - 1 tsp finely chopped
Coriander leaves - 1 tbsp chopped
Eggs - 2
Lime juice - 2 tsp
Mint leaves - 1 tbsp chopped
Green chutney and tomato slices for garnish (the chutney given in the chutney fish recipe may be used)
*Carrots beans cauliflower etc.

Savoury Vegetable Cake
Method
- Mix maida with baking powder, salt, sugar and turmeric powder.
- Combine onion with 1½, cup of oil in a small microwave safe bowl and cook on full power for 2-3 minutes. Allow to cool.
- Add the cooked onion, vegetables, green chilies, ginger, coriander and mint leaves to the maida mixture.
- Whisk the eggs with remaining oil and lime juice and fold into the above mixture.
- Pour it in a 6-7' round microwave safe dish.
- Place an upturned plate on the turn table and place the round dish on the plate. Cook on full power for 4-5 minutes. Allow to stand for 5 minutes.
- Cool and spread chutney on top and decorate with tomato slices.
