Ingredients:
5-6 medium sized potatoespeeled and diced
1 medium sized onion diced
1 bunch of carrots celery leeks parsely
15gms butter/margarine/ghee
1 cup of milk
500ml of chicken stock

Potato Soup
Method
- Saute onions and all the soup vegetables in some butter/ghee.
- Add the diced potatoes to it.
- Add the chicken stock to it and let it boil till all the vegetables are tender.
- With a masher or a fork, mash all the potatoes and add milk to it.
- Let it simmer for a good 45 mins.
- Add salt and pepper to taste.
- Serve hot with cheddar cheese sprinkled over it.
- Tastes real good with some bread sticks.
