Ingredients:
2 and 1/2 cups of Rice (soaked for 1 hour)
1 lemon-sized ball of Tamarind
8-9 Red Chillies (vary according to how hot it is)
2 and 1/2 tbsp of Kothmir (coriander seeds)
1 heaped tsp Jeera (cumin seeds)
2 and 1/2 tsp of Salt
1/4 tsp of Turmeric
1 piece of Jaggery (2 and 1/2 times that of tamarind or to taste)- pounded to powder
1/4 of a small Coconut - grated
2 and 1/2 cups of Rice (soaked for 1 hour)

Palak Dosa
Method
- Mix all the above ingredients - except the salt and the jaggery - in the mixie till they are a fine paste.
- Add freshly chopped (raw) spinach, salt and jaggery and make dosas.
- You can have these dosas with any mildly hot Chutney, Curd or just like that. Enjoy!
- Variations:
- You can also use the above batter to make - a) Cabbage dosa - by adding boiled cabbage,
- b) Patrode dosa - by adding finely chopped 'patrode' leaves(raw),
- c) Brinjal dosa - by adding semicircle slices of a big brinjal(raw) which can be dipped in the batter and laid on the tava to form dosas - these taste real yummy.
