Ingredients:
2 cups - mixed vegetable stir-fried in 2 tsp - margarine For Walnut Sauce:
1 cup - low fat yoghurt
70 g - walnut coarsely ground
1/2 clove - garlic crushed
1 - egg white
a dash - red chilli powder (optional)
1 tbsp - crumbled cottage cheese
1 tsp - chopped red capsicum
1 tbsp - finely chopped green capsicum
low fat salt to taste
pepper to taste

Mixed Vegetable With Walnut Sauce
Method
- Combine walnuts, yoghurt, cheese, egg white, garlic and mint leaves in a saucepan, heat gently for 2-3 mins. Do not boil.
- Remove from heat, add salt, pepper, chopped red and green capsicum.
- Serve over stir-fried vegetables.
