Ingredients:
plain flour (maida) - 2 cup
baking powder - 1/2 tsp
sodium bicarbonate -1½tsp
chili flakes -1½tsp
dried thyme - 1/2 tsp
dried oregano - 1/2 tsp
vegetable oil - 2 tbsp
curds - 1/2 cup
milk - 1/2 cup
sugar - 1 tsp
compressed yeast - 1 tsp
salt - 1/2 tsp
warm water as needed

Herbed Griddle Naan
Method
- Mix together all the ingredients from flour to oregano.
- Rub in the oil.
- In a small pan, combine curds and milk and heat very gently till slightly warm (It does not matter if the mixture curdles).
- Dissolve sugar in it and mix in the yeast.
- Add this liquid to the flour mixture.
- Add enough warm water and knead well into smooth, soft dough.
- Keep covered till the dough rises to double its volume.
- Knead the dough lightly again and divide into 8 balls.
- Roll out each ball into a disc, 1½, cm thick.
- Cook on a hot griddle on both sides (Do not add any fat while cooking).
- Serve hot with curry and /or dal and raitha.
