Ingredients:
1 - drumstick
1 - potato
1 - brinjal
1 cup - finely grated coconut
2 - onions
5 to 6 - podsof garlic (pounded)
3 to 4 red chillies
1/2 teaspoon - turmeric powder
1 pinch - jeera powder
curry leaves
mustard and jeera seeds
salt to taste
oil

Drumstick Potato Brinjal Gravy
Method
- Cut onions into thin long.
- Heat a pan and add 4 tablespoons full oil.
- Once hot, add thered chillies whose stem have been slightly slit.
- Let it darken, then addmustard seeds and very little jeera and curry leaves.
- Add onions and fryin medium flame till it becomes transparent.
- Then add the drumstick and fry for 2 to 3 minutes.
- Add the brinjal and fry for 2 minutes in slowflame.
- Then add the potatoes and fry for 3 mins.
- Once the potato gets slightly cooked, add turmeric powder, desired quantity of chillipowder, salt, pinch of jeera powder, salt and the pounded garlic.
- Save a tablespoon of grated coconut and add the rest into the cooking vegetables.
- Mix well and let it cook for a minute or two.
- Add very little water that is required to cook the drumstick, close it and simmer for sometime.
- Stir occassionally.
- Once cooked, add the rest of the coconut.
- Mix well, keep it in medium flame for a minute and serve.
- The recipe can be made with a combination of any 2 of the 3 vegetables as well.
