Besan Parathaa
Ingredients:
1 recipe paratha dough
1/2 cup gram flour
1½ tsp. red chilli powder
1/2 tsp. turmeric powder
3-4 pinches asafoetida
1/2 tsp. cumin seeds
1 tbsp. coriander finely chopped (towel dried)
oil or ghee to shallow fry

Method

  1. For Filling
  2. Mix the gram flour, chilli powder, turmeric powder, asafoetida, cumin seeds, corriander
  3. Take a lump of dough as per introduction
  4. Roll, spread oil on the chapati.
  5. Sprinkle some filling over it.
  6. Tightly roll into a swissroll.
  7. Form an overlapping spiral.
  8. Press and reroll to full size.
  9. Shallow fry and serve hot with curds and pickle.
  10. Making time: 20 minutes
  11. Makes: 7-8 parathas
  12. Shelflife: 3 days
