Apple Pancake
Ingredients:
2 Apples
5 tbsp Rice Flour/ Wheat Flour/ Maida
Sugar
1 pinch Baking Soda
A lump of Jaggery

Apple Pancake


Method

  1. Slice and cook the apples (sprinkle 5 tsps of sugar on top of the apples) in a pressure cooker for 5 minutes
  2. Peel the cooked apples and mash/blend them fine with a lump of jaggery.
  3. To the flour, add enough water to cause a thick, smooth batter (like a dosa batter)
  4. Stir the apple mixture into the batter and add a pinch of baking soda.
  5. Pre-heat a tava (preferebly an iron tava), pour a little oil to lightly grease it. Keep the tava in slow fire only.
  6. Pour a tablespoonful of the batter in the centre of the tava and spread it to about 4 inches diameter. Note that the pancake has to be thick (like an Uthappam).
  7. Pour a little oil onto the pancake's outline. Cover the pancake with a lid and let it fry and cook for a minute. Open the lid and carefully turn the pancake and let the other side fry as well.
  8. Serve the pancakes with Jam / Chocolate Sauce.
  9. Note: You could replace the apples with mashed ripe Bananas / Chickoos.
